<p class="wp-block-paragraph">Sicily has been famous for centuries for its rich culinary tradition, particularly for its delicious almond desserts. Over time, these sweets have become a symbol of the island and a delicacy appreciated all over the world.</p>



<p class="wp-block-paragraph">The history of Sicilian almond sweets has its roots in antiquity. Almonds, in fact, have been cultivated in Sicily for more than 2,000 years and have been used since ancient times for the preparation of sweets and treats.</p>



<p class="wp-block-paragraph">Even in ancient Greece,for whom southern Italy was known as a land rich in delicacies to the point that one of its names was Enotria or &#8220;land of wine,&#8221; they gave Sicily the nickname &#8220;land of almonds.&#8221; The Greeks, who colonized the island in the fifth century B.C., used almonds in many preparations, including sweets. Almond flowers were offered as gifts to the gods, and almond cakes were prepared for special occasions such as weddings and holidays.</p>



<p class="wp-block-paragraph">With the Roman conquest of Sicily in the 3rd century BC, the tradition of using almonds in the preparation of sweets continued to flourish. The Romans adopted Greek recipes and enriched them with their culinary influences. Sweets such as &#8220;mustaceus,&#8221; a kind of almond cake topped with honey and wine, became popular in ancient Rome. <p class="wp-block-paragraph">During the Arab-Norman period, which lasted from the 9th to the 12th century, Sicilian cuisine underwent a major evolution. The Arabs, who dominated the island for almost two centuries, introduced new techniques for growing almonds and new recipes.</p>

<p class="wp-block-paragraph">The Arabs were great admirers of almonds and extended their cultivation throughout Sicily. It was they who introduced innovative methods for growing and processing almonds, such as processing peeled almonds into almond paste, which became the basis for many Sicilian sweets.</p>



<p class="wp-block-paragraph">During the period of the Arab emirate of Sicily, Sicilian cuisine experienced a renaissance. Spice markets, the &#8220;souks,&#8221; were opened, where a wide range of spices could be found, including cinnamon, cloves, saffron, and cardamom. These exotic ingredients enriched Sicilian dessert recipes, which became increasingly complex and refined.</p>



<p class="wp-block-paragraph">With the Norman conquest of the island in 1091, Sicilian cuisine underwent a new transformation. The Normans, of Viking origin, brought their culinary traditions with them and merged with those of the peoples who had preceded them (and brought them back).</p>



<p class="wp-block-paragraph">The Normans particularly appreciated almond cakes and took them to a level of value never seen before. They innovated traditional recipes, introducing ingredients such as marzipan and fondant icing.</p>



<p class="wp-block-paragraph">Marzipan, a mixture of finely ground almonds, sugar, and flower water, became one of the main ingredients in Sicilian sweets. It was worked by skilled hands and transformed into shapes of fruit, animals and flowers with amazing details. These sweets, known as &#8220;marzipan pupi,&#8221; became very popular during the Norman period.</p>



<p class="wp-block-paragraph">Over the years, new variations of almond cakes have been developed in different parts of the island. For example, &#8220;cubbaita&#8221; are a typical dessert from Modica, made with almonds, honey and cinnamon, while &#8220;buccellati&#8221; are a specialty of Erice, made of almond paste and dried figs wrapped in a short pastry.</p>

<p class="wp-block-paragraph">The difference between &#8220;dairy-free&#8221; and &#8220;lactose-free&#8221; may seem subtle, but there is actually an important distinction between these two terms. Both refer to the fact that a product or food does not contain lactose, but there are key differences that separate them. In this article we will explore the two terms in depth to clarify the concepts.</p>



<h2 class="wp-block-heading" id="h-lactose-free-is-not-dairy-free">LACTOSE-FREE IS NOT DAIRY FREE.</h2>



<p class="wp-block-paragraph">Let&#8217;s start with the concept of dairy-free or lactose-free. This term indicates that a food product does not contain anything derived from milk or other dairy products. This means that &#8220;dairy-free&#8221; products do not contain milk, cheese, butter, cream or anything else made from dairy products. These products are designed for people with milk allergies or intolerances and for those who follow a vegan diet, which completely excludes foods of animal origin.</p>



<p class="wp-block-paragraph">The label &#8220;lactose-free&#8221; or &#8220;lactose-free,&#8221; on the other hand, refers to food products that are free of lactose, the sugar found in milk. People who are lactose intolerant are unable to digest this sugar because their bodies do not produce an enzyme called lactase, which is needed to break down lactose. As a result, consuming products that contain lactose can cause symptoms such as bloating, abdominal pain, flatulence and diarrhea. &#8220;Lactose-free&#8221; products are specially formulated to allow lactose-intolerant people to enjoy a balanced diet without having to avoid dairy products altogether.</p>



<p class="wp-block-paragraph">While &#8220;dairy-free&#8221; products are always also &#8220;lactose-free&#8221; because they do not contain dairy products, &#8220;lactose-free&#8221; products may still contain traces of dairy proteins or have been produced in an environment where dairy products are present. This may pose a problem for those who have severe milk allergies or who follow a strict vegan diet. For these individuals, it is important to read food labels carefully and look for the &#8220;vegan&#8221; or &#8220;dairy-free&#8221; symbol to ensure that a product is suitable for their diet.</p>

<h2 class="wp-block-heading">GLUTEN-FREE, NATURALLY.</h2>
<p>We at Verlessio are grateful for the advances in gluten- and lactose-free foods, but we like to use naturally occurring ingredients wherever possible.</p>
<p>Chestnuts are a fabulous resource. They are a foodstuff that lends itself to many uses in the kitchen. Traditionally they are found in desserts (hey, have you tried our Tortina alle Castagne &#8216;?) but their neutral flavour allows for great versatility and to end up in pasta, and not just as a topping but as a basic ingredient!</p>
<h2>MAKE YOUR OWN CHESTNUT FLOUR AT HOME.</h2>
<p>Nothing evokes autumn feelings in Italy like the aroma and flavour of chestnuts and marroni. Did you know that you can make a virtually keto dough using chestnut flour? It is almost impossible to find outside Italy, but today we want to teach you how to make it.</p>
<p>The first step in preparing homemade chestnut flour is to obtain fresh, large chestnuts. Bear in mind that a kilo of chestnuts will yield about half a kilo of flour. The basic principle for preparation is that the chestnuts must be completely dehydrated and then ground. The easiest way to dehydrate them is to cut the shell with an X using a well-sharpened knife. Then the chestnuts are placed on a baking tray and baked at 200 degrees for about half an hour. Once baked, they should be left to cool. Using a well-sharpened knife, remove the shell and skin from each chestnut. Pay attention because this step is very important: if we leave the skin, also called tegument, our chestnut flour will be extremely bitter. Once shelled, roughly chop the chestnuts and put them back in the oven, this time at a lower temperature, to dry for 16-24 hours. Once they have become dry and hard, we can proceed to pulverise them using a high-power blender or coffee grinder.</p>
<h2>CHESTNUT FLOUR PASTA.</h2>
<h3>INGREDIENTS</h3>
<p>200 g flour<br />2 whole eggs (yolk + albume)</p>
<h3>PREPARATION</h3>
<p>Sift the flour into a well on the pastry board, making a hole at the top to accommodate the eggs.<br />Shell the eggs and pour them whole onto the flour. Using a fork, start beating the yolks until a batter is created, gradually incorporating the flour from the edges of the fountain.<br />Once you have a workable mixture, leave the fork and start kneading with the fingers of your hand until you reach a consistent mass. We continue to knead vigorously, using the palms of our hands, until we form a smooth and elastic ball of egg dough, which we wrap in plastic wrap and place in the refrigerator for about 30 minutes.<br />Take the ball of egg dough, flour it lightly and start rolling it out. You can either proceed with a rolling pin, making sure that the thickness is the same everywhere, or with a sheeter: divide the roll into pieces, flour them and pass them through the rollers, up to the last or penultimate notch (the thinnest sheet is recommended for filled pasta).<br />Once ready, lay the sheet on the pastry board and cut it according to the dish you want to make.</p>

But fear not: with the right ingredients and a little creativity, it is possible to create delicious Italian dishes without gluten or lactose.</p>
<h3>It&#8217;s not all about wheat.</h3>

Then add layers of gluten-free pasta, ground meat and lactose-free tomato sauce and you have a delicious lactose-free lasagna.</p>

You can use lactose-free or delactose-free mozzarella to get the same flavor and texture as traditional cheese. In addition, there are brands that also produce lactose-free or delactose-free ricotta and parmesan cheese, perfect for adapting other traditional Italian recipes such as cannelloni or risotto.</p>
